This recipe satisfies lots of bellies on a cold winter night...
12 oz mushrooms, diced
1 onion, chopped
1 shallot, chopped
1 celery stalk, chopped
3 tbsp butter, or vegan substitue
2 tbsp olive oil
1 tbsp flour
1 c. broth of your choice
1 c. cashew milk
salt to taste
1. Heat butter and olive oil over medium heat. Add onion and shallot until soft. Add diced mushrooms and cook until soft, adding salt to taste.
2. Stir in flour until coated and turn off heat.
3. In separate sauce pan, heath broth to simmer and add celery. Stir in mushroom and onion mixture. Simmer for 10 minutes or so. Stir in cashew milk and add more salt to taste. Garnish with herbs of your choice; add soy sauce and/or hot sauce to taste. Enjoy!
